Every Honey Has a Story: A Rare Gift from the Manuka Tree
Across New Zealand’s rugged hills and native forests, the Manuka tree (Leptospermum scoparium) blooms briefly each year. Its delicate flowers appear for only a few short weeks, offering nectar that bees transform into one of the most studied honeys in the world.
Manuka honey is not produced every season. Weather, bloom timing, and bee access must align perfectly. When they do, the result is a honey that reflects the raw, untamed land from which it comes. Ours is certified organic and fully traceable from hive to jar.
The Unexpected Turn: From Tradition to Measured Science
Manuka honey has long been valued locally, but modern research revealed something remarkable. During maturation, Manuka honey naturally develops methylglyoxal, commonly referred to as MGO. This compound is now used as a measurable marker of strength and authenticity.
Higher MGO levels reflect a more concentrated expression of the Manuka flower’s chemistry. What matters most is transparency. True Manuka honey is tested, graded, and verified, not described with vague promises.

The beehives are all located in the beautiful and sometimes challenging terrain of northern Canterbury, on the same sites as it original started on over 70 years ago, producing both organic and non-organic Manuka, Honeydew, Clover, and more.
