Mieli Thun Acacia Honey is prized for its pale straw color, exceptional clarity, and delicate flavor. Naturally high in fructose, it has a smooth, fluid consistency and generally remains liquid much longer than many other honeys.
Its aroma is light and floral, recalling acacia blossoms and other white spring flowers, with subtle notes of sugared almond and bourbon vanilla. On the palate, it is sweet and silky without becoming overpowering. The finish is clean and delicate, with a fresh hint of sweet almond.
Because its flavor is so mild, acacia honey is an excellent choice when you want sweetness without covering the flavors of tea, yogurt, fruit, cheese, or baked goods. It is also lovely enjoyed directly from the spoon.
Like all raw honey, it can eventually crystallize. Acacia honey usually crystallizes slowly, although naturally occurring nectar from other spring flowers may affect how quickly its texture changes.
