Baked Cheesy Cornbread with Butter and Honey

Ingredients

For the Cornbread:

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • ¼ tsp baking soda
  • ¼ cup sugar
  • 1 cup buttermilk
  • 2 large eggs
  • ¼ cup melted butter
  • 1 cup shredded cheddar cheese
  • ½ cup corn kernels (optional for added texture)

Preheat the Oven:

  1. Preheat your oven to 400°F (200°C).
  2. Grease an 8-inch square baking pan or tray with butter or cooking spray.

Prepare the Dry Ingredients:

  1. In a large bowl, whisk together the cornmeal, flour, baking powder, salt, baking soda, and sugar until well combined.

Combine the Wet Ingredients:

  1. In a separate bowl, whisk together the buttermilk, eggs, and melted butter until smooth.

Mix the Batter:

  1. Pour the wet ingredients into the dry ingredients and stir until just combined.
  2. Do not overmix.
  3. Fold in the shredded cheddar cheese and corn kernels until evenly distributed.

Bake the Cornbread:

  1. Pour the batter into the prepared baking pan or tray, spreading it evenly.
  2. Bake for 20-25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

Cool and Serve:

  1. Allow the cornbread to cool for about 10 minutes before slicing.
  2. Cut the cornbread into 16 slices.
  3. For each serving, place 2 slices on a plate.
  4. Serve with a pat of softened butter and drizzle honey over the top.
