Honey Glazed Grilled Pineapple Dessert

Ingredients

For the Grilled Pineapples:

  • 1 ripe pineapple, peeled, cored, and sliced into rings
  • 2 tbsp coconut oil (for grilling)

 

For the Honey Glaze:

 

For the Toppings:

  • 8 scoops coconut ice cream (dairy-free)
  • ¼ cup grated peanuts (or any nut of choice)
  • Fresh mint leaves (optional, for garnish)

Directions

Prepare the Pineapples:

  1. Preheat your grill or grill pan to medium-high heat.
  2. Brush the pineapple slices with melted coconut oil on both sides.

Grill the Pineapples:

  1. Place the pineapple slices on the preheated grill.
  2. Grill for 3-4 minutes on each side, or until the slices develop nice grill marks and become slightly caramelized.
  3. Remove from the grill and set aside.

Make the Honey Glaze:

  1. In a small saucepan, combine the honey with cinnamon, coconut water, lime juice, and ground cinnamon.
  2. Heat the mixture over low heat, stirring occasionally, until it becomes slightly thickened and fragrant, about 2-3 minutes.
  3. Remove from heat and let cool slightly.

Assemble the Dessert:

  1. Place 1-2 grilled pineapple rings on each serving plate.
  2. Drizzle the honey glaze generously over the grilled pineapples.
  3. Add 2 scoops of coconut ice cream to each plate.
  4. Sprinkle grated peanuts over the top.
  5. Garnish with fresh mint leaves if desired.
