Honey-Tahini Dressing with Grilled Vegetables

Ingredients

For the Tahini Dressing:

  • ¼ cup tahini
  • 4 tablespoons Honey with lemon juice
  • 1 tablespoon extra virgin olive oil
  • 1-2 cloves garlic, minced
  • Salt and pepper to taste
  • Water, as needed for consistency

 

For the Grilled Vegetables:

  • 1 lemon, cut into slices
  • 1 cup cauliflower florets
  • ¼ cup cherry tomatoes
  • ½ cup Brussels sprouts, halved
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Directions

Prepare the Dressing:

  1. In a bowl, whisk together the tahini, honey with lemon juice, olive oil, and minced garlic until smooth.
  2. Adjust the consistency by adding water a tablespoon at a time until desired thickness is reached.
  3. Season with salt and pepper to taste. Set aside.

Grill the Vegetables:

  1. Preheat a grill or grill pan to medium-high heat.
  2. Toss cauliflower florets, cherry tomatoes, and Brussels sprouts with olive oil, salt, and pepper.
  3. Grill the vegetables, turning occasionally, until tender and lightly charred (about 10-15 minutes).
  4. Grill the lemon slices for 2-3 minutes until they have grill marks and are slightly caramelized.

Serve:

  1. Arrange the grilled vegetables on a plate.
  2. Drizzle the honey-tahini dressing over the vegetables.
